This chapter examines the history of alcohol in the nineteenth century. Alcohol became the focal point of many anxieties, ranging from concerned social and economic changes to shifts in values and behavior. While alcohol has been blamed for many social ills, the tendency went further in the 1800s as many critics abandoned the temperance solution—the notion that moderate drinking was the answer—in favor of the idea of total abstinence. One of the innovations underpinning this policy shift was the availability of safe drinking water to many urban populations. This technological and material development provided one of the bases for the radical anti-alcohol movements of the nineteenth century.
